These healthy peanut butter rice krispy “treats,” were a rainy day experiment that turned out delicious! I’m a fan of PB2 Powdered Peanut Butter as a satisfying peanut butter alternative that you can have more than 2 tablespoons of given the reduced fat content. I combined that with sugar free maple syrup (a Target brand) and Nature’s Path Organic Kamut Puffs (in place of rice krispy cereal).
The resulting treats were super YUM.
-3 cups Kamut Puffs
-1/3 cup sugar-free maple syrup
-1/2 cup PB2 mixed with 1/2 cup water
1. Mix together PB2 and water. Add in maple syrup.
2. Stir until combined.
3. Microwave at 30-second intervals, stirring after each. Do this 4-6 times until the mixture has caramelized.
4. Coat Kamut puffs with the caramel mixture by stirring together in a large bowl and fill parchment-lined 8×8 tray with the resulting mix.
5. Freeze tray for 1-hour.
6. Cut into bars and enjoy!
