Carrot Cake Protein Muffins

This recipe tutorial shows you how to make Carrot Cake Protein Muffins (for only 2sp each for those following WW) using Kodiak Cakes Whole Grain Pancake Mix. Who doesn’t love a tasty bite of carrot cake? Feel free to add more sweetener to make these even tastier. Enjoy and Happy YOUTOBER Day 13!



  • 1.25 cups whole grain buttermilk Kodiak pancake mix
  • 1/4 cup peeled and shredded carrots
  • 1 large egg
  • 1 Tbsp. vanilla extract
  • 3/4 cup water
  • 1 tsp pumpkin spice
  • 1 tsp cinnamon
  • 3 Tbsp. Stevia
  • 1 tsp. baking powder



Preheat oven to 350 degrees. In a medium bowl add egg, water, extract, and stevia. Stir well. In a separate bowl combine kodiak pancake mix, pumpkin spice, cinnamon and baking powder. Add dry ingredients to the wet. Stir just until combined. Then fold in shredded carrots. Pour into muffin liners. Bake for 15-18 minutes or until an inserted knife or toothpick comes out clean.
