Chocolate and ice cream are two of my favorite guilty pleasures. As such, I’ve instinctively been drawn to Halo Top, Enlightened, Arctic Zero and the other “light” ice cream brands that have cropped up during the recent low-cal ice cream craze.
As I recently acquired a Cuisinart frozen dessert/ice cream maker so decided to experiment with making my own healthier, frozen treats. I discovered it doesn’t take many ingredients to make something tasty and frozen. If you’re willing to sacrifice the creaminess, you can make a variety of desserts with a non-dairy beverage of your choice. Here’s a recipe for the first I invented.
Ingredients: 2 tbs Wondercocoa powder (can be ordered online or purchased at Mollie Stone’s), 1 tbs Stevia (or your favorite sweetener), pinch of salt, 2 cups almond milk
1. In a small bowl, mix cocoa powder, stevia and a pinch of salt until well-blended.
2. In a larger bowl, whisk together dry ingredients with 2 cups of almond milk. Whisk until the cocoa powder is fully mixed and the milk looks like chocolate milk.
3. Cover and refrigerate for 1-2 hours.
4. Pour mixture into ice cream maker and allow to blend for 15-20 minutes.
5. Remove and serve!
